For the latest of our Chef¡¯s World Series dinners, in collaboration with Velaa Private Island in the Maldives, the usually members’-only Mark¡¯s Club in London¡¯s Mayfair opened its doors, for just one night, to Cond¨¦ Nast Traveller readers. Velaa chef Gaushan De Silva, who heads up the hotel¡¯s creative Aragu restaurant, crafted the special dinner ¨C Japanese yellowfin tuna, Chilean seabass with prawn mousseline and wagyu beef two ways with salt-baked potato and a red-wine jus were among the parade of pretty dishes. It was all paired with wines by Velaa¡¯s head sommelier Ibrahim Waheed, finishing with a delicately sweet 2014 Sauternes Premier Cru Class¨¦, Chateau Lafaurie-Peyraguey to match the vanilla and almond crumble with warm strawberries. The streaming evening sunshine might not quite have rivalled the water-colour sunsets over the sea you get at Velaa, but it came pretty close.
